Kadai Bowl Cooking Recipes

Inspired by traditional fire bowls seen used throughout India for hundreds of years, our Kadai bowls have each been expertly handcrafted from solid cast iron and left finished in a natural iron effect. Historically, Indian Kadai bowls were used to cook fragrant and spicy dishes for whole villages, often taking centre stage and precedent over other cookery methods in any community affair. Kadai bowls are still widely used in India today and, in recent years, have become increasingly popular all across the world. Cooking in the great outdoors is the perfect way to enjoy some fresh air whilst creating something absolutely delicious for your family and friends. Whether you’re a lover of alfresco dining or you’re looking for a new way to explore your culinary skills, the limits are quite literally endless when it comes to cooking on a Kadai bowl! This is exactly why we’ve developed a number of exciting recipes for you to try out in the comfort of your own outdoor space. So, without further ado, grab your cooking tools, get your chef’s apron on, and join us on a cooking adventure like no other!

Outdoor Kadai Cooking


Before getting your pans oiled and your ingredients at the ready, it’s important to properly set up your Kadai bowl for cooking. Although Kadai bowls are steeped in culinary history, food safety is always something that needs to be ensured before undergoing any outdoor cooking adventure. It’s also always worth noting that Kadai bowls (like BBQs) are designed to have an open flame, therefore they must never be left unattended and the safety of children and pets must always be considered before and during use. Now, let’s get things fired up!

STEP ONE: Ensure that your Kadai bowl and grill is set up on a level surface. Ideally, fire bowls should be placed on a stone or concrete surface, preferably on a raised stand, to ensure that the area beneath the bowl doesn’t get scorched during use. We do not advise placing a Kadai bowl directly onto a grassy surface without a stand as the intense heat will cause your grass to burn and could cause a potential fire hazard. Never place a fire bowl on a wooden surface.

STEP TWO: We advise using food-safe charcoal or dry wood to light your fire. The amount required will vary depending on the size of your fire bowl, but we recommend about 2kg for most of our larger designs. Create a pyramid shape with your chosen fuel and place a firelighter in the centre. Your Kadai bowl is now ready to be lit.

STEP THREE: Allow your fire to burn for at least 30mins, ensuring that the fuel has a coating of ash and is grey/white in colour before undertaking any cooking. Depending on what it is that you wish to cook, you can either use the grill directly or, for one-pot dishes such as curries, you can place a food-safe iron cooking pan on top of the grill.

Once cooking is complete, remove the grill and top-up with dry wood to keep your fire going or leave the fire to naturally diminish (fully attended). Whether you’re looking to go the traditional route with a spicy Indian curry or you’re looking for something a little more exotic, we’ve covered a myriad of exciting dishes to tantalise all taste buds!  Always remember that outdoor cooking is all about experimentation and, unlike baking, there is no exact science to it. So, feel free to substitute ingredients in any of our recipes to suit your personal food preferences. For all you veggie lovers out there, this one is for you! Charlotte’s vegetarian curry is a quick and easy recipe designed to celebrate a number of vegetables available throughout all months of the year. Lightly spiced with a rich tomato-based sauce, this recipe is the perfect weekend treat for all of the family to enjoy. Simply add some poppadums and fire-grilled naan breads for an instant Indian feast. Prep time is approximately 15mins and cook time is approximately 40mins.

Charlotte's Vegetarian Curry


2 tbsp olive oil 

1 large red onion 

1 white onion

1 large piece of ginger, finely grated 

4 cloves of garlic, crushed 

1/2 tsp turmeric 

1 tsp ground cumin 

1 tbsp Garam masala 

1/2 tsp dry chilli flakes 

1 tbsp curry powder, to taste 

227g tin of chopped tomatoes 

1/2 tsp brown sugar 

1 cauliflower, cut into florets 

2 sweet potatoes, cut into chunks 

A squeeze of lemon juice 

1 small tin of coconut cream

A handful of coriander, to serve with red chillies and lime (optional)

1 tbsp of yogurt (optional)


1 large Kadai bowl

1 Kadai bowl grill

1 iron cooking pan

Any necessary cooking tools such as tongs and a spatula

STEP ONE: Set up your Kadai bowl safely. Heat the oil in an iron saucepan and cook the chopped onions for 10mins until soft then add the spices (ginger, garlic, turmeric, cumin, chilli flakes, garam masala and curry powder). Cook for a further 1min.

STEP TWO: Stir in the tomatoes and sugar. Add the cauliflower, potatoes, coconut cream, and seasoning to taste. Cover with a lid and gently cook for a good 30mins, stirring occasionally, until all the vegetables are tender.

STEP THREE: Once the vegetables are cooked, add a squeeze of lemon juice. Top with fresh chilli, a lime wedge, and coriander for additional flavour. Serve with your choice of Indian bread and a dollop of yogurt (optional). Enjoy!
